わが国におけるカビ毒による食中毒とその現状

文献概要

　昨年9月に起こった事故米および12月に起こった汚染米事件により，食品を汚染するカビ毒が注目を集め，その健康被害への関心が急激に高まっている．カビ毒とはその名の通り，カビが産生する二次代謝産物のうち，ヒトや家畜に慢性，急性の健康被害を引き起こす化学物質を指す．カビ毒のような自然毒は環境中に常在するものであるため，気候や天候などで大きな影響を受け，根絶は不可能と言われている．また，カビ毒の多くは耐熱性であることから，加工工程等では容易には減毒しないため，食品衛生上きわめて重要な危害物質の1つである．

　本稿では，食品に汚染する主要なカビ毒とその中毒を，誌面の許す限り紹介していきたい(表)．
